Chef Johnny Hernandez is one of San Antonio’s most celebrated culinary entrepreneurs, known for his deep passion for Mexican culture and cuisine. He runs 11 restaurant concepts, including multiple locations of La Gloria. His latest venture, Casa Hernán Alta Cocina in Southtown, is his self-described “signature restaurant” — an elevated dining experience he calls the most unique interior Mexican food experience in San Antonio.  The menu centers around a celebrated mole program, featuring both classic sauces like mole negro, rojo, and verde, alongside contemporary creations such as mole rosa with roasted beets and mole de pistachio with pineapple. A true San Antonio original, Hernandez continues to evolve and reinvent himself, bringing bold, authentic Mexican flavors to the heart of the city.
